Are there any Epicure Spices lovers here? We took their African Potato Stew Spice recipe and substituted the chicken for one of our rice blends!
We simply added everything to one pot, and cooked for 25 minutes, but if you pre-cooked the rice, you could follow the exact instructions, and just add the blend to the stew.
2 large sweet potatoes
1 cup Floating Leaf Rice Blend (Try the Prairie Blend!)
1 pkg African Sweet Potato Stew Seasoning
1 can (28 oz/796 ml) diced tomatoes
1 can (14 oz/398 ml) light coconut milk
1 cup veggie broth
1⁄2 cup natural crunchy peanut butter, or nut butter alternative
Toppings (optional): chopped parsley or cilantro
Peel and cut sweet potatoes into small cubes (about 4 cups). Add potatoes and all liquids to a pot. Stir in spice mix. Add rice blend. Cover; cook for 25 min.
Stir in peanut butter. Add toppings, if desired.
