Switch up the rice you use in your salad bowls to pack a PUNCH of flavour and texture - and also add more health benefits! Jasmine Thai Trio is a blend of the World's 3 Jasmine rices; Riceberry Rice (purple jasmine), Red Jasmine, and Brown Jasmine. They offer a slightly chewy texture with a sweet nutty flavour.
Buddha Bowls are a really great way to either prep your meals for the week OR use up whatever you have left in the fridge before the next grocery shop. They are so easy to make, AND healthy.
Here's what we used:
Jasmine Thai Trio Rice Blend
Cooking Instructions:
- Combine 1 cup Jasmine Thai Trio with 1-1/2 cup water, 1/2 tsp Turmeric, Sprinkle of Sea salt
- Bring to a boil
- Cover tightly with a lid, reduce heat to low, and simmer for 20 minutes
- Remove from heat and let stand for 5 minutes before serving
- Drain excess water if needed. Season as desired
Top with:
Cucumbers
Shredded Carrots
Avocado
Red Cabbage
Chickpeas
Hummus
And any other veggie of your choice!
Sauce
1/4 cup natural crunchy peanut butter
2 tbsp Soy Sauce or Tamari (or to taste)
grate 1" piece of ginger
mince 2 garlic cloves
Splash of lime juice
Add a bit of water to thin
Warm it in a pot until it's easy to pour.
Combine, and enjoy!
