Arancini (balls) - A perfect little snack or appetizer to use with leftover Floating Leaf risotto.
• Cured meat
• Melty cheese (e.g., brie, cheddar, manchego, provolone)
• Hot peppers
• Egg wash,1-2 eggs beaten with a splash of water
To form arancini, flatten about 1/3 cup of chilled risotto into a patty in your palm and make a small divot in the center for filling. Fill that divot with your selection of fillings (above)
Roll the formed balls in the egg wash followed by a toss in the breadcrumbs.
You can deep-fry (350 degrees)
or bake in the oven (375 degrees until golden).
