Ingredients:

  • 1 cup Brussels Sprouts
  • 1 cup cooked wild rice 
  • 2tbsp olive oil 
  • 1 sliced onion
  • 1/2tsp salt
  • 1tbsp rice vinegar 
  • 2tsp brown sugar
  • 1tsp chilli flakes 
  • 2tsp fish sauce (optional)
  • 2tbsp light soy sauce 
  • 3tbsp chopped Parsley 
  • 1/2 lemon

Instructions:

  • Slice the bottom of the Brussels sprouts and gently pull the leaves apart from the sprout. 
  • In a large frying pan, heat the oil over medium heat. Add onion, salt, sugar and vinegar, and simmer until the onion is golden brown. 
  • Add Brussels leaves, chilli flakes, fish sauce, soy sauce and mix it well. Pop the lid on and cook it over a medium heat for about 5 minutes. 
  • Add wild rice and parsley, mix it together. Squeeze lemon juice on top and turn off the flame. 
  • Cover it and let it rest for 10-15 minutes before it is served.
