Ingredients:
- 1 cup Brussels Sprouts
- 1 cup cooked wild rice
- 2tbsp olive oil
- 1 sliced onion
- 1/2tsp salt
- 1tbsp rice vinegar
- 2tsp brown sugar
- 1tsp chilli flakes
- 2tsp fish sauce (optional)
- 2tbsp light soy sauce
- 3tbsp chopped Parsley
- 1/2 lemon
Instructions:
- Slice the bottom of the Brussels sprouts and gently pull the leaves apart from the sprout.
- In a large frying pan, heat the oil over medium heat. Add onion, salt, sugar and vinegar, and simmer until the onion is golden brown.
- Add Brussels leaves, chilli flakes, fish sauce, soy sauce and mix it well. Pop the lid on and cook it over a medium heat for about 5 minutes.
- Add wild rice and parsley, mix it together. Squeeze lemon juice on top and turn off the flame.
- Cover it and let it rest for 10-15 minutes before it is served.
